Pork Tenderloin Diane

What You'll Need
- 1 (1-pound) pork tenderloin, cut into 10 pieces
- 2 teaspoons lemon pepper
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 tablespoon finely chopped fresh chives or 1 teaspoon dried chives
What to Do
- Place meat between 2 sheets of heavy-duty plastic wrap, and flatten to 1-inch thickness, using a meat mallet or rolling pin. Sprinkle both sides of meat with lemon pepper.
- Melt butter in a large skillet over medium-high heat. Add meat, and cook 3 to 4 minutes on each side or until done. Transfer to a serving platter, and keep warm.
- Add lemon juice, Worcestershire sauce, and mustard to skillet; cook until thoroughly heated, stirring constantly. Pour sauce over meat, and sprinkle with chives. Serve immediately.
