Shortcut Pork Sauerbraten

Did you know that traditional beef-style sauerbraten marinates for days? Well, with this shortcut pork version we can go from start to finish in only 1-1/2 hours!
What You'll Need
- 2 tablespoons olive oil, divided
- 2 onions, halved and sliced very thin
- 1/4 pound thinly-sliced deli ham, cut into -inch strips
- 8 cups shredded Chinese cabbage or Salad Savoy
- 2 tablespoons balsamic vinegar
- 1 (1- to 2-pound) boneless single center-cut pork loin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
What to Do

In a soup pot, heat 1 tablespoon oil over medium heat. Add onions and ham and cook 10 to 12 minutes, until onions are browned, stirring occasionally. Add cabbage and balsamic vinegar and cook 10 minutes.

Meanwhile, coat pork loin with remaining oil and paprika and garlic powder. Reduce heat to low and place pork loin over cabbage. Cover and simmer 1 to 1-1/4 hours or until pork is cooked through.

Cut into thin slices and serve topped with cooked cabbage mixture.

I wonder if you could use prepackaged coleslaw mix to shorten prep time even more?

I would think simmering it long enough to cook through, the coleslaw variety would be become overcooked and "slimy". You could always leave out the cabbage mix until about ten minutes before the pork loin would be ready?
