Silky Smooth Pepper Chops

We call these Silky-smooth 'cause the sauce is so creamy and delicious - a perfect match for pork chops.
What You'll Need
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 4 pork rib chops (1 to 2 pounds total), about 1 inch thick
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1/4 teaspoon dried thyme
- 1/2 teaspoon salt
- 2 teaspoons black pepper
What to Do
- In a large skillet, heat oil over medium heat and saute garlic 1 to 2 minutes or until golden. Add pork chops and cook 10 to 12 minutes, turning once. Remove chops from skillet and drain excess liquid from skillet.
- Reduce heat to low and add remaining ingredients to skillet; mix well. Heat mixture 2 to 3 minutes until heated through.
- Return chops to skillet and coat with sauce.
- Continue cooking an additional 6 to 8 minutes, or until done to medium or to desired doneness beyond that.
Notes
For a fuller black pepper flavor, use fresh-cracked black peppercorns. Simply grind the pepper in a pepper mill or, if you don't have one, place 2 teaspoons whole peppercorns in a plastic storage bag. Seal the bag and use a mallet or rolling pin to crack the peppercorns on a durable surface.
