Rice Pie

Everyone always wants "a piece of the pie" - well, everybody can have a cut of this one...and boy, will Mom approve!
What You'll Need
- 2 tablespoons butter or margarine
- 1 can (4 ounces) sliced mushrooms or mushroom stems and pieces, drained
- 1/2 cup chopped onions
- 1 package (10 ounces) frozen chopped spinach, thawed and drained
- 1 1/2 cup cooked instant rice
- 1/2 pint (8 ounces) heavy cream
- 2 eggs
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon ground nutmeg, plus extra for sprinkling
What to Do
- Preheat the oven to 350 degree F.
- Melt the butter in a large skillet over medium-high heat. Sauté the mushrooms and onions until soft.
- In a large bowl, combine the remaining ingredients, except the extra nutmeg. Add the mushrooms and onions, mixing well.
- Pour the mixture into a 9" or 10" pie plate that has been coated with nonstick vegetable spray. Sprinkle the top with extra nutmeg, if desired, and bake for 40 minutes or until the center is set.
Notes
Don't have any mushrooms? Don't worry, try this with sautéed bell pepper, asparagus, or broccoli pieces.
