What You'll Need
- 1 (20-ounce) package refrigerated shredded potatoes
- 1 small onion, finely chopped
- 1 egg
- 3/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded Cheddar cheese
- 1 cup vegetable oil
What to Do
- In a large bowl, combine potatoes, onion, and egg; mix well. Add flour, salt, pepper, and cheese; mix until well combined.
- In a large skillet over medium heat, heat oil. Measure about 1/2 cup potato mixture and form into pancake shape. Place pancakes in hot oil and cook 3 to 4 minutes per side, or until golden on both sides. Drain on a paper towel-lined platter. Repeat with remaining pancakes. Serve warm.

My recipe is similar, with added spices to your liking. I have even added tuna and dill for tuna cakes. Whenever and whatever you use for the cakes make and shape patties to desired size. Place on cookie sheet to chill for 20-30 mins. before placing in hot oil. Cakes will hold their shape much better wuthout falling apart.

These were easy peasy!! I added some garlic powder to kick it up a little and served them with sour cream..Delicious!!
