Cheesy Onion Potatoes

These home-style potatoes topped with Cheddar cheese bring back memories of a restaurant specialty. A scrumptious side dish couldn't be any easier! Our recipe calls for unpeeled potatoes, which make this dish quick. Remember, though, there are no rules. So if you want to peel your potatoes, go for it!
What You'll Need
- 6 medium baking potatoes, unpeeled and cubed (about 2 pounds)
- 1/4 cup butter
- 1 (1-ounce) envelope onion soup mix
- 1 1/2 cup (6-ounces) shredded Cheddar cheese
- 5 green onions, chopped
What to Do

Preheat oven to 400 degrees F. Place potatoes in a 9-inch by 13-inch baking dish coated with cooking spray. Dot with butter, and sprinkle dry onion soup mix over the top.

Cover and bake 25 minutes; uncover and stir. Cover and bake an additional 30 minutes or until potatoes are tender. Sprinkle with cheese and green onions; serve immediately.

These are delicious! I found a way to make them without heating up the oven. Combine potatoes, cut up onions, packet of soup mix and oil and mix well. Put into a large skillet, add 1/4 cup water, cover, and cook on low-med heat for 35-40 minutes, stirring occasionally.

OMG, delisciious recipe. I didn't peel the potatoes, just scrubbed them very well and cut into small cubes. I used someone's idea to shake in a bag with the dry soup mix and to melt the butter in the baking pan first. Baked at 350 deg while something else was baking and they were done in 30 minutes. Will try sprinkling with bacon sometime.

I make similar seasoned potatoes for baking... this is much easier if you put the onion soup mix in a ziploc bag, spray potatoes with some Pam, then shake them in the dry mix and pour into pan. This is also much better with some garlic pepper added :)

This is a new fan favorite at my house! I've also thrown chopped cooked bacon on top when I add the cheese and green onion, because what isn't better with bacon? I've also made a healthier version with olive oil instead of butter and salt-free seasoning along with chopped dehydrated onion.

I've made something similar for years but with 1/3 cup olive oil mixed with the onion soup mix but no cheese or green onions. This one sounds delicious but wondering if I could just substitute the melted butter for the oil in the Ziplock bag. hmmm... Love the addition of the cheese and bacon pieces suggested by Dawnwch. Will definitely try that.

I've made something similar to this, very quick and tasty! Using a ziploc bag, shake the potato chunks in the onion dip mix to fully coated. Pour into a greased baking dish and drizzle with melted butter. You can also use butter flavor Pam instead of the butter if watching calories :) After baking, sprinkle with cheese, chopped scallions (green onions) and bacon pieces. Then send it back to the oven for about 5 minutes... Serve with a side of sour ceam... YUM!

I've made this for awhile, but didn't add cheese and onions. Very taste and quick to make.
