Carpaccio Sauce

Don't be put off by the fancy-sounding name. Carpaccio Sauce is a snap to whirl together in your blender, and spoon over roast beef to add a restaurant-special flair.
What You'll Need
- 2 cups mayonnaise
- 4 anchovy fillets
- 2 teaspoons capers
- 2 bunches fresh parsley, coarsely chopped
- 4 teaspoons red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
What to Do
- Combine all ingredients in a blender jar; blend until very smooth.
- Store in refrigerator.
- Makes 2 cups
Notes
If serving sauce over warm meat, allow sauce to reach room temperature before using.
