Yogurt Cheese

If you think you couldn't get excited by a cheese spread made of yogurt, be prepared to change your mind. You won't believe how good it tastes (and it's good for you, too)!
What You'll Need
- 1 container (16 ounces) plain lowfat or nonfat yogurt (with no added gelatin or thickeners)
What to Do
- Line a large wire strainer with a large paper coffee filter or 2 to 3 sheets of white paper towel; place the strainer over a deep bowl. Add the yogurt, then cover with plastic wrap.
- Refrigerate until the liquid has drained into the bowl and the yogurt has thickened to a spreadable consistency, about 8 hours. (There should be about 8 ounces of liquid; discard the drained liquid.)
- Transfer the yogurt cheese to a small bowl and store, covered, in the refrigerator until ready to serve.
- Makes 3/4 cup.
Notes
You can use this as you would any cheese spread, or try it mixed with apricot preserves
