Canadian Breakfast Sandwiches

What You'll Need
- 4 English muffins, split in half
- 2 medium tomatoes, sliced
- 8 slices Canadian bacon (about 4 ounces total)
- 8 slices Muenster cheese (4 to 5 ounces total)
What to Do
- Preheat the broiler. Lay out the English muffins on a cookie sheet and toast them under the broiler for 3 to 5 minutes, or until lightly browned.
- Layer each muffin half with a slice of tomato, Canadian bacon then cheese. Turn off the broiler and turn on the oven to 350 degrees F.
- Bake for 7 to 9 minutes, until the cheese is melted and the muffins are heated through.
Did You Know...
that Canadian bacon is a leaner alternative to regular bacon? It is actually smoked and cured pork loin and, though it is used pretty much the same way as bacon, Canadian bacon resembles ham in taste and appearance. It can be found in the supermarket along with the regular bacon and pre-sliced meats.

The Canadian bacon that I am familiar with comes in fully cooked round slices, and it tastes closer to a ham than it does a cured pork bacon. I have never seen it sold as a raw product. Since I really like fresh ripe tomato slices on a grilled ham and cheese sandwich, I'm sure that this recipe is very tasty. I'd use the whole grain variety of English muffins, as they are a little bit more nutritious and I like their nutty flavor.

As a Canadian, I have a question. What is Canadian bacon? I've eaten streak bacon, and peameal bacon but in all my 62 years, I have never come across Canadian bacon. Could someone please enlighten me. Thank you.

Hi there! In the United States, we refer to the fully cooked back bacon (smoked and then cut into round pieces) as Canadian bacon. While the Mr. Food Test Kitchen has not tried it, we believe that peameal bacon is an equivalent substitution. Enjoy!

You can also use light munster cheese and a lighter version of an english muffin. Those will lessen the calories for us !!!!!
