Chicken Avocado Dagwoods

It's a cinch to make these Chicken Avocado Dagwoods and they're made out of ingredients that you'll most likely already have in your kitchen. What could be easier than that?
What You'll Need
- 8 slices bacon
- 1 tablespoon Mayonnaise
- 8 slices sourdough bread, toasted
- 2 ripe avocados, peeled and mashed
- 8 lettuce leaves
- 8 (1/4-inch-thick) slices roasted chicken breast
- 4 (1-ounce) slices Monterey Jack or provolone cheese
- 8 slices tomato
- 8 slices red onion
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- Garnish: sweet pickles
What to Do

Place bacon on a microwave-safe rack in a microwave-safe baking dish; cover with paper towels. Microwave at HIGH 6 minutes or until bacon is crisp. Drain bacon, and set aside.

Spread mayonnaise on toast. Layer mashed avocados, lettuce, chicken, cheese, tomato and onion slices, and bacon on 4 slices toast. Sprinkle with salt and pepper. Top with remaining toast. Garnish, if desired. Serve immediately.

This sandwich is fully loaded - just the way I like them! I actually think I enjoy this a lot more than a big juicy burger! Avocados make an excellent and healthier alternative to mayonnaise on just about any kind of sandwich, and even in salad dressings. It is a little difficult to eat since it is so big, but I don't mind getting a little bit messy when food is this good!

Love avocados and they are sooo goood for you! Would like ways to put them into everyday foods, not specialties. Know how to make quacamole and put on sandwiches - any other ideas?
