This hearty omelet recipe was an Old West favorite that today makes a perfect light lunch served up on a platter or as a sandwich filling. Either way, the diced ham and veggies make for a tasty combo!
What You'll Need
- 2 eggs
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup diced ham (2 slices)
- 2 tablespoons chopped onion
- 2 tablespoons chopped green bell pepper
- 1 tablespoon butter
- 2 slices bread
What to Do
- In a small bowl, combine eggs, salt, and black pepper; mix well. Stir in ham, onion, and bell pepper; mix well.
- In a small skillet, melt butter over medium heat. Add egg mixture, and cook 2 to 3 minutes, or until eggs are set.
- Using a spatula, flip eggs then cook an additional 2 to 3 minutes, or until set. Serve between bread slices.
