Bacon Wrapped Scallops

Bacon-wrapped scallops make an incredibly flavorful party appetizer that looks fancy but is really quick and easy to make! Your guests will be impressed and only you will know how simple it was!
What You'll Need
- 3/4 pound bacon
- 1 pound sea scallops, rinsed and patted dry
- 1 cup ketchup
- 1/3 cup packed light brown sugar
- 1/2 cup white vinegar
What to Do
- Preheat oven to 425 degrees F.
- Cut bacon slices in half crosswise. Roll a piece of bacon around each scallop and secure with wooden toothpick; place on rimmed baking sheet.
- Bake 15 to 18 minutes, or until scallops are cooked through and bacon is crisp.
- Meanwhile, in a medium saucepan, combine ketchup, brown sugar, and vinegar over medium heat; mix well and cook 5 to 7 minutes, until sugar is dissolved.
- Dip bacon-wrapped scallops in sauce and serve with remaining sauce.

What I am wondering about is if the bacon wrapped scallops could be cooked in the microwave as that is the best way to cook bacon? Would that change the texture of the scallops?

You shouldn't microwave this recipe. The scallops will turn to rubber.

A perfect appetizer loved by all! I made this for a pot-luck get together and it went over big. Just like the recipe called for, I made 2 dozen, but I will cut the sauce recipe in half the next time as it was more than necessary, although, the sauce was what made it so delicious! I had to leave it in the oven 5 minutes longer than the recipe called for, turning over once to get the bacon crispy on both sides. It's the easiest and less time consuming recipe I've tried. Although the scallops were delicious, they were a little pricey @ $14.59/lb. (bought them fresh in a seafood market). What I couldn't get over was the fact that they are in season, and I live in a seashore state in New England. Didn't care, because they were well worth the price. Little time, little effort and a good outcome :)
