Chilled Shrimp with Lime

The Spanish name for this dish is ceviche con camarones. Sounds fancy, huh? Well, it's a bright and tasty seafood salad perked up with lively salsa and a super lime marinade. Call it what you like, but any way you say it, it's "muy bueno", which means it's very good!
What You'll Need
- 1 (12 ounce) package frozen cooked shrimp, thawed and coarsely chopped
- 2 cups fresh lime juice
- 3 large tomatoes, seeded and chopped
- 1 onion, chopped
- 1/3 cup chopped fresh cilantro
- 3 garlic cloves, minced
- 1/2 cup salsa (see Note)
- 1/3 cup olive oil
What to Do

In a medium bowl, combine shrimp and lime juice. Cover and chill 2 hours.

Rinse shrimp, drain, and return them to bowl. Add remaining ingredients and toss well. Cover and chill at least 2 hours before serving.
Notes
We like to use hot salsa to add a spicy twist, but any salsa will taste great. Serve this with your favorite crackers, thin slices of toasted French bread, or flour tortillas that have been cut and toasted.
