What You'll Need
- 7 cups chicken broth
- 2 cups (1 pint) half-and-half
- 2 1/2 cups instant mashed potato flakes
- 4 cups (16 ounces) shredded sharp Cheddar cheese
- 1/2 teaspoon black pepper
- 2 scallions, thinly sliced

Cheesy Potato Soup Recipe Instructions
- In a soup pot over medium heat, bring chicken broth and half-and-half to a boil.
- Stir in potato flakes, cheese, and pepper; mix well. Cook 3 to 5 minutes, or until thickened, stirring constantly.
- Top with more cheese and scallions, and serve immediately.

Good starter recipe. Added some cubed leftover ham and bacon crumbles and cayenne pepper to perk up the flavor. Next time will dice up a potato and add to pot.

This soup is soooo easy and delicious. I diced potatoes and boiled them and threw them in too!

I just think it's kind of weird that a potato cheese soup recipe does not call for POTATOES.

Rather bland - but I used fat free/reduced sodium ingredients. Added cayenne and it seemed to help. Will try original recipe next time and will probably give it five stars.

would this recipe be suitable to use on a day long buffet in a slow cooker?

I have not made this particular soup, but from experience with other creamy soups, be sure to keep the soup covered to avoid build-up of "skin" on top. Don't put the entire quantity into the slow cooker at first; use smaller quantities and pre-heat each one in the microwave before adding to the pot so the soup is hot for the next guest. Enjoy! :-)

I certainly will make this soon! Its that time of year for 'warm tasty soups'! I thought I'd make it the original way, then try adding broccoli florets another time. Just experiment, as thats how 'recipes are made.' Thanks (again) for all the awesome recipes! 'little ole' Ohio cook'

I make soup for my Dad every week, and potato is his favorite. One week, when really busy, I tried this recipe to save time from my usual potato cheese soup. He loved it! Now I have a great "go-to" whenever I need quick and delicious!

My grandmother loved this recipe so much, we call it grandma's cheese soup. We have made this so many times and lost the recipe. I am so glad it was posted on here. This is the best and soup to make. We love making it and putting bacon bits on top. It makes it so good. Best soup to make when it is really cold out side.
