Chicken Gumbo

Gumbo doesn't have to simmer all day to be good. This pot of goodness is ready in less than 20 minutes! French bread makes the perfect go-along.
What You'll Need
- 1 teaspoon olive oil
- 1 (10-ounce) package frozen chopped onion, celery, and bell pepper, seasoning blend
- 2 tablespoons all-purpose flour
- 1 cup canned chicken broth
- 1/4 teaspoon hot sauce
- 1 (14-1/2-ounce) can Cajun-style stewed tomatoes, undrained
- 1 (10-ounce) package frozen sliced okra
- 1 1/2 cup frozen diced cooked chicken breast
What to Do
- Heat oil in a large nonstick skillet over medium-high heat. Add frozen seasoning blend, and cook, stirring constantly, 3 minutes. Add flour, stirring well.
- Add chicken broth, hot sauce, and tomatoes; cook 3 minutes or until mixture is slightly thickened.
- Add okra and chicken; cover and cook 8 minutes or until okra is tender.

oops just forget, for pepper spices you can either use the Clubhouse Italian seasoning-with the red lid, or change to coriander instead.

change black pepper to clubhouse Italian seasoning with red only-it contains red pepper like sweet peppers, that are dehydrated, while the one with the black lid contains pepper spices. Leave out hot sauce-use Worchestershire sauce instead, plus use regular stewed tomatoes instead.
