Ham and Hash Brown Soup

We think this recipe's title, Ham and Hash Brown Soup, is a mouthful to say, but take a mouthful of it and you'll think it's absolutely delicious - you won't mind if it's a mouthful to say.
What You'll Need
- 2 1/2 cups water
- 2 cups frozen cubed hash brown potatoes
- 2 cups chopped cooked ham
- 1 1/2 cup thinly sliced carrots
- 1/2 cup chopped green bell pepper
- 1 (14.75-ounce) can cream-style corn
- 1 (11-ounce) can nacho fiesta cheese soup, undiluted
- 1/2 cup water
- 1 dash Dash of black pepper
What to Do

Combine first 5 ingredients in a Dutch oven; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until vegetables are tender.

Add corn and remaining ingredients to Dutch oven; cook until thoroughly heated, stirring often.
Notes
Supermarkets are making it oh-so-easy to get homecooked meals on the table-fast! Look for already-chopped ham in the meat section and prechopped vegetables with the produce.

This soup is great. I would recommend using red or idaho potatos. Not frozen ones. Frozen ones do get mushy, but the taste is still good.

IF your soup is too thin it is always an easy fix,, add 2 rounded Tablespoons flour and 1/4 cup cold water or milk stir till smooth and then slowly add a bit of hot soup to mix then add to soup pot simmer a minute longer

This recipe is interesting and has potential.... great idea when using up the leftover ham After all recipes are actually a guide and we make them our own with our own ideas Thinking of browning chopped 2 celery small onion 1 medium carrot in 2 Tbl butter then add chopped ham brown also, add 3 chicken cubes 3 1/2 cups water or 2 cans chicken broth 2 cans water add1/2 small green pepper for color pepper(optional ) add hash browns simmer and stir till potatoes are soft then add the cream style corn and cheese soup I prefer the regular can of cheese soup adjust seasonings and also check for thickness if too thick add al bit more water or milk simmer till hot bubbly. serve with hot French bread or garlic bread fresh out of the oven

Well...flavor is pretty good. Too much liquid..rather watery. Hashbrowns cooked down to almost nothing...fresh cubed red potatoes would be hold up better. Probably will remove from my recipe box.
