Why choose between two of your favorite soups, chicken soup and tomato soup, when you can get the best of both worlds with this combined recipe for Quick Chicken Tomato Soup?! We've even incorporated a few of our other favorite soup ingredients, such as carrots and brown rice, to make this a truly unforgettable homemade soup.
What You'll Need
- 2 cans (10 ounces each) condensed chicken broth
- 2 chicken broth cans of water
- 2 tablespoons tomato paste
- 3/4 cup small carrot chunks (2 to 3 carrots)
- 1/2 cup coarsely chopped onion (1 small onion)
- 1/4 teaspoon dried basil
- 1/2 cup uncooked long-grain or brown rice
What to Do
- Combine all the ingredients, except the rice, in a large saucepan over high heat. Bring to a boil, then reduce the heat and add the rice.
- Simmer for 30 to 35 minutes, or until the rice and vegetables are tender.
