Quick Vegetable Soup

Taking the mystery out of making homemade soup in a snap is just one of the many tricks I have up my sleeve!
What You'll Need
- 2 (10.5-ounce-each) cans condensed chicken or beef broth
- 2 soup cans of water
- 3 cups frozen mixed vegetables or medium-diced fresh vegetables of your choice (such as carrots, peas, corn, etc.)
- 1/2 cup uncooked small pasta (such as orzo, ditalini, or acine di pepe)
- 1 tablespoon dried parsley flakes
What to Do
- In a medium-sized saucepan, combine the broth and water over high heat.
- Add the vegetables and bring to a boil. Stir in the pasta and parsley, then reduce the heat.
- Cover and simmer for 15 to 20 minutes, or until the vegetables and pasta are tender.
Notes
You can even add some leftover cooked pasta instead of the 1/2 cup uncooked pasta. (About 1 cup cooked pasta will do.)
