What You'll Need
- 2 cups chopped cooked chicken
- 2 (14-ounce) cans chicken broth
- 1 (14-1/2-ounce) can diced tomatoes with garlic and onion, undrained
- 1 (11-ounce) can yellow corn with red and green bell peppers
- 1 (10-3/4-ounce) can tomato puree
- 2 teaspoons fajita seasoning
- 1 teaspoon chili powder
- 1 cup crushed tortilla chips
- Chopped fresh cilantro
What to Do
- Combine first 7 ingredients in a 3-1/2- or 4-quart slow cooker.
- Cover and cook on HIGH setting 6 hours. Top each serving evenly with crushed tortilla chips and cilantro before serving.
Note
Swing by the supermarket, and pick up a rotisserie chicken to use in this soup. It not only adds great flavor, but also saves you a lot of time when getting dinner on the table. Generally, you'll get 3 cups of chopped chicken from a rotisserie chicken.
