Have you ever tried to make homemade soup in the microwave before? There's no need to be skeptical 'cause our easy soup recipe for Tortilla Chicken Soup is just as tasty even though it's thrown together in a jiffy. We even love making this recipe in the summer 'cause we won't have to heat up the house. It's a win-win for everyone!
What You'll Need
- 3 1/2 cups chicken broth
- 1/2 cup water
- 1 cup medium or hot salsa
- 1/2 pound boneless, skinless chicken breasts, cut into 1/2-inch chunks
- 2 (6-inch) flour tortillas, cut into 3- x 1/4-inch-thick strips
- 1/2 cup (2 ounces) finely shredded Cheddar cheese
- 1 to 2 scallions, thinly sliced
What to Do
- In a microwave-safe 2-quart bowl, combine the chicken broth, water, salsa, and chicken chunks; mix well. Cover and cook in the microwave at 90 percent power for 13 minutes.
- Remove from the microwave and add the tortilla strips; mix well. Sprinkle each bowl with the cheese and scallions just before serving.
Notes
Add some excitement to your soup by dolloping each bowl with sour cream before topping with the cheese and scallions.
