What You'll Need

  • 2 medium-sized zucchini, sliced
  • 2 medium-sized summer squash, sliced
  • 2 medium-sized onions, peeled and sliced
  • 2 tomatoes, quartered
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 cup green or black olives
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. In a large skillet or wok, combine all ingredients.

  2. Cook over medium heat, stirring occasionally, for about 20 minutes or until zucchini and summer squash are tender.

I made this with locally grown vegetables and it was delicious!

My mother has made something similar for years and we could never get enough of it! She used bacon instead of tomatoes... YUM!
