Lovin' Onions

If you've never eaten onions baked like this...boy, are you in for a treat! We call these baked onions "Lovin' Onions," 'cause just one bite and you're going to be lovin' them! (You'll also love how easy they are.)
What You'll Need
- 1 tablespoon butter
- 7 onions, coarsely chopped (about 7 cups)
- 1/2 cup self-rising flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/4 cup (5 ounces) shredded Cheddar cheese, divided
- 1 1/4 cup (5 ounces) shredded Monterey jack cheese, divided
- 1 tablespoon jarred jalapeno peppers, drained and chopped (optional)
What to Do

Preheat oven to 350 degrees F. Coat a 1-1/2-quart casserole with cooking spray.

In a large skillet over medium-high heat, melt butter. Add onions and sauté about 10 minutes, or until softened.

Meanwhile, in a medium bowl, combine flour, salt, and pepper. Add 1 cup of each cheese; mix well. Add jalapeño peppers, if desired, and cooked onions; mix well. Pour into prepared casserole dish. Combine remaining cheese and sprinkle evenly over onion mixture.

Bake 30 minutes, or until cheese is melted and bubbly.

I made this for a family cookout with grilled chicken baked potatoes. I made 1/2 with jalapenos 1/2 without. My son-in-law put it on top of his potato called it baked cheesy onion potato. It was a hit.

Although it does not say what kind of onion to use, I am thinking Vidalias would be the best. I am a huge lover of onions, as is my husband. Not all of the six kids would agree. I am going to make this, but struggling for a name that makes the kids want to try it. Cowboy food? Indian food? LOL! I am curious what sort of onions you all have used? Yellow? White? Vidalia? Spanish?

I love cooked onions and this recipe with a onion cheese casserole was delicious! I love how cooking onions makes them sweeter. Of course, you have to like onions to eat a dish of onions, but many people do! (If not, you can pass on the onions and grab a different side. lol) I use sweet onions or vidalias if available.

It would be great if you showed the nutritional information. As a type 2 diabetic, this is important. Since you didn't I have to determine how many carbs are in each ingredient. Please start providing nutritional information.

To those that have asked "why self rising flour" without an answer... I think it is used to make it puff up a bit like biscuit dough.

What is the purpose of self-rising flour as opposed to regular flour in this recipe? It does not have a crust or topping that needs to rise. It seems from the photo that the flour is used just to thicken the onion-cheese mixture. Is there something special? Thank you, test kitchen team.

I just made this for dinner along with a turkey breast. The onions get very mellow, and it is really quite good. I added one thinly sliced zucchini. I had fresh jalapeos so I used one chopped jalapeo. I will make this recipe again. Tasty!!

Does it have to be Self-rising flour? I never use it and I don't need a whole bag just for one recipe. .

Made for Thanksgiving but was not a big hit as a side dish. However, later rewarmed and served with blue corn ships and everyone loved it! Will make again as an appetizer. (Used whole jalapeno in recipe).

Made them for our family Thanksgiving dinner. I did not use the jalapeno peppers. They were a big hit. Will use this recipe again, very simple.
