Summer Grilled Zucchini

In the summer our local farmers sure do produce lots of zucchini, which means it's a great buy. Let's cook up some of that value right on our grills!
What You'll Need
- 1/4 cup white vinegar
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried tarragon
- 1/2 cup mayonnaise
- 3 medium-sized zucchini, cut in half lengthwise
- 1 slice Swiss, Muenster, or mozzarella cheese (optional)
What to Do

In a small saucepan, combine white vinegar, salt, pepper, and tarragon, and bring to a boil. Remove mixture from heat and let cool.

Preheat grill to medium-high heat.

Add mayonnaise to cooled mixture and blend well, until smooth. Brush mixture on both sides of zucchini slices. Grill slices 5 minutes on each side, with grill cover closed.

If adding cheese, top zucchini with cheese 1 to 2 minutes before cooking is completed. Cook until cheese is melted.
Notes
If you have some really large zucchini, we recommend using 2 and cutting them lengthwise in thirds.

We really like these. I have also used a combination of zucchini, yellow squash, red onion and green pepper which we like equally well.
