What You'll Need
- 1 1/2 cup diced cooked rotisserie chicken
- 1 1/2 cup cooked rice
- 1 cup chopped celery
- 1/2 cup chopped walnuts or pecans
- 1 (10-3/4-ounce) can cream of chicken soup, undiluted
- 2 teaspoons finely chopped onion
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground red pepper
- 1 tablespoon lemon juice
- 3/4 cup mayonnaise
- 1/4 cup water
- 3 hard-cooked eggs, sliced
- 2 cups coarsely crumbled potato chips
What to Do
- Preheat oven to 400 degrees F. Combine first 10 ingredients in a large bowl.
- Combine mayonnaise and water in another large bowl; stir with a wire whisk until smooth. Add mayonnaise mixture to chicken mixture. Gently fold in egg slices.
- Spoon mixture into a greased 7- x 11-inch baking dish; top with potato chips. Bake, uncovered, 15 minutes or until casserole is thoroughly heated and bubbly.

I used a mixture of white and brown rice. I also added a little bit of powdered chicken stock. My family loved it. I will most definitely be making this again. But I want to know is if you can freeze it?

This sounds delicious . I'm going to add a drained can of peas & carrots with mine. But going to take the suggestion from pmyers281768 about the cooking time .

I tried this casserole and it's a keeper for my family, although I'd rethink the prep time. The 8 min. has to be after the rice and eggs are cooked, the celery and onion is chopped and the eggs sliced. I also would cook it covered with foil for 20 min. and then uncovered for 10 to 15 minutes until the chips are browned. I didn't use all the pepper called for and left out the red pepper altogether.

Tried this casserole and it calls for way too much pepper. Try cutting down the black pepper to 1/4 teaspoon or less and go easy on the red pepper.
