Country Chicken and Rice

It's no wonder one-pot recipes are tops on so many of our lists when it comes to dinnertime solutions. We think the best part of this recipe is that the longer it cooks the better the flavors blend.
What You'll Need
- 1 (3- to 3-1/2-pound) chicken, cut into 8 pieces
- 6 cups water
- 2 (15-ounce) cans tomato sauce
- 1 large onion, finely chopped
- 1 teaspoon dried thyme
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 cups long- or whole-grain rice, rinsed
What to Do

In a large pot, bring all ingredients except rice to a boil over medium-high heat.

Cover and allow to boil 35 minutes.
- Add rice and cook 25 to 30 minutes, or until rice is tender, no pink remains in chicken, and chicken juices run clear.

Can I cook this in a crock pot? If so, does it take less water?

Hi there! You can make this in a crock pot, but you need to adjust as follows: Add 1-1/2 cups water or chicken broth, 1 cup tomato sauce, 1/4 teaspoon black pepper, 3/4 teaspoon salt. Cook on High 3 to 3- 1/2 hours or on Low 5 to 6 hours, or until chicken is no longer pink in center. Check the rice halfway through cooking. If it looks dry add another 1/2 cup water so the rice doesn't burn. Enjoy!!

Lot easier than my recipe. But I use yellow rice and chicken stock or broth and also add some canned mushrooms and slicek green olives. (don't you hate that you can't back space on this site!!!?????? to correct typos?!

cut up chicken brown in oil and a bit of butter add onion 3 cloves garlic maybe1/2 green pepper brown also add 6 cups water 2 or 3 chicken bouillon cubes 2 bay leaves1 can diced tomatoes(15ounce)and I can tomato sauce(8ounce) salt pepper to taste Can add a pinch of red pepper flakes of desired simmer covered till done one pot and very good

Somehow adding the well rinsed uncooked rice got deleted but add that also before covering and simmering

Seems like this would be very soupy with 6 c water and 2 cans of tomato sauce. The ratio for rice is 2c water to 1c rice.

I made this .My family loved it ,M E TOO ,BECAUSE IT WAS SO EASY .p.s. I used chicken legs .

Made as the recipe calls for, it's a bit bland. So when I made it again I added garlic powder, adobo, a can of drained diced tomatoes, and a jar of green olives and it was delicious!

Add some ONION SOUP DRY MIX along with the 2 cups of water. It gives much more flavor along with the regular onion.

What 2 cups of water? I see the recipe says 6 cups of water . . . but I am sure your idea to add the Onion Soup Dry Mix is a good one!
