Marinated Cucumber Salad
- SERVES
- 6
- CHILL TIME
- 2 Hr
This crunchy and delicious homemade marinated cucumber salad offers welcoming garden-fresh taste in every bite. It's a super deli salad to serve with any of your favorite dishes!
What You'll Need
- 1/4 cup hot water
- 1/3 cup sugar
- 1 (8-ounce) bottle Italian dressing
- 3 cucumbers, cut into 1/8-inch slices
- 1 medium-sized onion, cut into 1/2-inch slices
What to Do
- In a medium bowl, combine hot water, sugar, and Italian dressing. Add cucumbers and onions.
- Mix well then cover and chill at least 2 hours before serving.
Note
The longer you let the cucumbers marinate, the more flavorful they become. If you like them really crispy, then you should plan to eat them within a day (which should be no problem since, once you start, it’s hard to stop)!
With an abundance of cucumbers around, our Test Kitchen came up with another cool and refreshing way to enjoy them -- Cool Cucumber Soup!

My aunt and mom used to make a cucumber salad . You slice onions and cucumbers very thin.Soak them in salted water in the frig for about 3 or 4 hours.Squeeze them out very well. Put them in a bowl and add sour cream as a dressing. You can add pepper if you like.

For anyone on low carb, low sugar, or low calorie simply use Splenda in place of the sugar works well These quick & easy recipes are great for today's faster paced lifestyles If you want vinegar & oil dressing ... 1/2 cup vinegar 1/4 cup oil 2 Tblespoons water 1 t oregano 1/2 t basil 1/2- 1 t garlic powder 1/2 t salt Shake well before using.. some like to add 1 or 2 teaspoons of sugar(or Spenda) to this It is individual preference can even add a few red pepper flakes if you like (Not cayenne pepper)

I am not a big cucumber fan in my salads. My wife loves cucumbers in her salad and I cannot wait to make this for her. The salad I make for her is a cumcumber, tomato and 1/2 onion mixed with some miracle whip, little salt and pepper. Let it chill for a couple of hours and it is ready to eat. She says it is to die for. Thanks again Mr. Food and have a good one.

Try a little mustard in the dressing -like a teaspoon- it will take the "burp" out of the cucumbers.

Thanks for the mustard trick, I will have to try it. This is why I don't eat too many cucumbers, because of the burps. I planted them in my garden.

Oh my mom used to make this every summer. Once you start eating them next thing you know they are gone.
