Reuben Macaroni Salad

If you're a fan of Reuben sandwiches, then you're going to love our reinvented Reuben Macaroni Salad. We tossed together all of your favorite Reuben ingredients to make this easy pasta salad recipe that's sure to make 'em all say "Mm!"
What You'll Need
- 2 cups bowtie macaroni
- 1/2 pound cooked corned beef, diced
- 1 cup (4 ounces) shredded Swiss cheese
- 1 (16-ounce) can sauerkraut, drained
- 1/2 teaspoon caraway seed
- 1 cup bottled Russian dressing
What to Do
- In a medium pot of boiling water, cook macaroni until tender; drain and cool.
- In a large bowl, combine corned beef, cheese, sauerkraut, caraway seed, and macaroni. Add Russian dressing and toss thoroughly. Chill until ready to serve.
Notes
- Serve with tomato wedges, if desired.

I love Reuben sandwiches, so I can't wait to make this. I'm going to try a with thousand island and a spoonful with Russian to decide which one to use.

I always read ratings before making something new. Made this exactly as posted, and, although some may think me weird, I used half 1000 Island and half Russian dressings, since there was lots of contention posted as to which to use. Turned out great; however, next time will use only 1000 Island. A different pasta salad for sure. One additional comment is: Is "macaroni" (tube pasta), "bowtie" as listed in the recipe, or rotini as in the photo, the recommended pasta? I know this is a nit-pic thing, but had to get it off my chest. I know the answer is: use whatever pasta floats your boat...it's all good. Will definitely make again.

I am making this for a picnic tomorrow and it occurs to me that I don't know if I can serve this cold or will I need to heat? Reuben sandwiches are always hot; not sure how this will taste cold?

This recipe is almost perfect, but it does need a touch of 1000 Island dressing for a more authentic flavor. I remade it with 1/3cup each of Russian dressing and the 1000. It made a huge difference, plus increased caraway seed to 1 teaspoonful. Will definitely serve at my next supper party with marble rye bread and a great wine. My friends will love it!! Thank you for sharing.

My husband and I made this fo supper tonight and it was delicious. Went exactly by the directions and it was awesome and made plenty. This was nice for a light dinner. When you get corned beef from a deli, ask then to slice it on a 10 and that is 1/2lb and you can cube it easily. Ever ingredient was consistent and it tasted wonderful. Every recipe I have made so far is a keeper and this one is too.

Do you really use Russian dressing instead of Thousand Island?

Russian dressing tastes similar to thousand island dressing. I think it is milder in taste. Ken's makes a great russian dressing

This sounds real good and since my family loves Reuben sandwiches and Macaroni Salad, it would make a great meal for us.

This recipe is absolutely fabulous. If you like Reuben sandwiches, you will love this recipe. I've yet to have anyone tell me they didn't like it.

We love ruben sandwiches and the salad sounds wonderful, we are trying to eat less bread and we can use whole wheat pasta.
