Hearty Amish Chicken Stew
This down-on-the-farm, Amish-style, comforting one-pot stew is sure to take the chill out of a winter night. Anytime you have a hungry gang and don't want to resort to fast food, this quick-cooking Hearty Amish Chicken Stew will be ready before you know it.
Notes
This will thicken up as it sits, so you may want to add additional water when you reheat any leftovers.
This one-pot meal has it all! The only thing we'd suggest adding is a bread basket with some delicious buttery breadsticks and some warm biscuits. Ingredients
- 10 cups chicken broth
- 4 potatoes, peeled and cut into quarters
- 1 small onion, cut into 1-inch chunks
- 2 celery stalks, cut into 1/2-inch chunks
- 1 carrot, peeled and sliced thin
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 12 ounces bowtie pasta
- 1 rotisserie chicken, skinned, boned, and shredded (about 3 cups)

If you love the comforting homestyle flavor of homemade chicken noodle soup, you will love this heartier version. It seemed to be a bit much broth, so I used about 8 cups - I also made a cornstarch slurry to thicken the sauce up a bit. It was great. This makes quite a large amount of food, but if you keep the pasta separate, the leftovers can be frozen for no fuss tasty meals later!

In the video it says to turn heat to LOW before you add the pasta! This is an important step missed in the recipe.

I have made this both with rotisserie & a roster chicken it's an amazing stew but to put it over the top nothing beats homemade noodles. I also added 1 pkg of flavorless gelatin with water to the stew to give it that really smooth rich sauce hope this helps. Love this site & all the comments very helpful. Have a great day one and all.

Ppl who have nothing positive to say are IDIOTS...and still wet behind their ears!! Their idea of a good meal is McDonald's, and then bitch when they have acne!! The idea of a pre-cooked chicken is a good idea!

I like the idea of using rotisserie chicken. It sure beats cooking your chicken to make the stock and then taking it off the bones. The Amish wouldn't pick up super market bread, they would have their own homemade bread or some of those delicious biscuits you mentioned above. Thank you for all the recipes, especially the Amish ones!!
