You're going to love these chewy, nutty, and chocolatey Scotchie Rockies. Don't be surprised when they disappear right before your eyes!
What You'll Need
- 1 (12-ounce) package semisweet chocolate chips (2 cups)
- 1 cup butterscotch chips
- 1/2 cup peanut butter
- 1 (10-1/2-ounce) package miniature marshmallows
- 1 cup salted peanuts
What to Do
- Combine first 3 ingredients in 3-quart microwave-safe glass bowl. Microwave at MEDIUM (50 percent power) 3-1/2 to 4-1/2 minutes or until chips soften, stirring after 2 minutes. Stir until mixture is smooth.
- Stir in marshmallows and peanuts. Spread mixture in lightly greased 9- x 13-inch baking dish. Refrigerate until firm. Cut into 2-inch squares. Store in refrigerator.
Notes
Melting the candy chips and peanut butter in the microwave eliminates the hassle of a double boiler-and any chance of burning the mixture.

Butterscotch is one of my favorite hard candies and I seldom run across a recipe for butterscotch except for cookies. I like this recipe because it also included peanuts. I like a candy with a little crunch.

I have always used the double boiler method without out a lot of trouble but the use of the microwave does make the process a little easier. How easy can you get with the recipe. Those peanuts on the top just floating there does it for me.

These are awesome I love the mixture of flavors. There's no graham crackers so they are not S'mores, and you have added Butterscotch chips, so I think they should be called. "Not S'mores But More"

Can't get past the Rocky Road, looks like the Rocky Road candy/iceream we ate as kids in California in the 1940's/1950's Thus I vote for Rocky Road

I'd call this wonderful concoction, "ScutterBotch Rocky Road"! Because it's "ooh so good"!!!! Perfect to make and pack in little tins to open when surprise guests stop by. Delicious with crunchy red apples during fall football games!!!
