Strawberry Cheesecake Bars

"Wow!" That's what the reaction will be when you serve these delectable Strawberry Cheesecake Bars. They start with the ease of a strawberry cake mix covered with a creamy cheesecake-like topping. Talk about heavenly!
What You'll Need
- 1 (18.25-ounce) package strawberry cake mix
- 1/2 cup butter, melted
- 1 large egg, lightly beaten
- 1 (8-ounce) package cream cheese, softened
- 1 (16-ounce) package powdered sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
What to Do
- Preheat oven to 375 degrees F.
- Combine cake mix and butter in a large bowl. Add one egg; stir well. Press into a lightly greased 9- x 13-inch pan.
- Beat cream cheese, powdered sugar, and 2 eggs at medium speed with an electric beater until creamy; stir in vanilla. Pour cream cheese mixture over crust.
- Bake 30 minutes or until just set; cool completely on a wire rack. Cut into bars.

melts in your mouth!! true a bit sweet, but second batch got 2/3c sugar....and my 17 year old grand daughter took recipe home with her pan of strawberry cheesecake bars.

I got a little bit 'scared' about making these after having read some of the comments, but...we really liked these. I think the sweetness some people complained about is actually in the strawberry cake mix crust. My husband enjoyed these immensely with a nice cup of coffee. I will certainly do these again.

Disappointing.. this recipe needs to be tweaked. First of all, one cup of powdered sugar is ample. If you use two cups of powdered sugar for the topping it's way to sweet and uneditable. Secondly, the topping should only be combined with one egg, 1 cup of powdered sugar, and 1 cream cheese. I didn't like the topping tasted, so I would of prefered a no bake cheesecake feel. I also didn't like the cake portion. It came out rather chewy/weird and it was cooked. I would of followed the box instructions and then try other methods for the topping. I just wasn't to pleased.

Too much powdered sugar! They were so sweet even my sweet tooth son thought they were over the top with sugar. Cut the powder sugar to 1 cup and they became edible.

I did not think much of these when I made them, but after they set, the next day everyone loved them. Very sweet, cut small.

Absolute best dessert I've ever had! I gave my mother the recipe and she fixed it for her senior citizen get-together...You would have thought these people never seen food before! It was gone in a flash!

I made these for my Mom for Mother's Day - and they were a huge hit! I didn't have a whole box of pwd sugar, so maybe mine were great because the toping was less sugary. My Dad - who is a cookie monster - said this was the best "different" thing I ever made, please make him one in lemon - which I plan to do for Father's Day!

I love sweets and all things sugary, but this was not good. The strawberry cake part tasted like plastic and the top, like some of the others said, was was too sweet.

For the Strawberry Cheesecake Bars, it call for 16 ounces of powdered sugar, does that mean 1# = 16 ounces of powdered sugar or 2 cups which is also 16 ounces?

I think a box of powdered sugar is way too much. That's 4 cups of sugar. I'm getting a toothache just thinking about it. I would go with the 2 cups.

I thought these were horrible and I know I followed the directions precisely. They turned out so sweet that neither myself or my daughter could eat them. I had to scrape 1/2 or more of the cream cheese topping off in order to eat it at all. I would only use 1/2 box of confectionary sugar, if that much.

This recipe is soooo easy. And the end results are awesome. These bars are delicious. My boyfriend has made me make them for him and friends 3 times now and everyone loves them. I think next time we will try it with lemon like so many others have done...thanks so much Mr. Food!!!!!!

This was totally awesome! I have made it twice now. Once with strawberry cake mix and another with lemon. My friends can't get enough and there are never any bars left on my plate when I take them to a party.

This was MUCH to sweet for us. I either need to add more cream cheese or less powdered sugar. Everyone was greatly disappointed.

I would add thawed strawberries to the mix (thawed strawberries are soft and easy to blend in the cake batter. I'm making one for mother's day!

I have made this recipe successfully for years with a lemon cake mix. Strawberry cheesecake for summer sounds like a nice change. Can't wait to try it!

I don't think a box of powered sugar is too much. My recipe for Texas Cake frosting has a box of powered sugar in it.

I am gonna try this with a gluten free cake mix so my Mom can try it on Mother's Day since she loves cheesecake and hard to make a gluten free one.

I hope you can make this for your Mom/ I love strawberry anything.I might add sliced fresh strawberries. sprinkle shredded coconut on top for variation. Maybe sliced chocolate dipped strawberries on top. I have to try this one. Please let us know how the gluten free turns out.

A whole pound of anything sounds like a lot. But it takes more than 2 cups (1 lb.)of confectioner's sugar to frost a 10' 2 layer cake.Check out Baker's recipes for frostings puddings, etc. That would give a better idea what a "lot"of powdered sugar is. Hope this helps with the "lot" idea. good luck
