Anything stuffed with cheese is bound to be a hit, and that goes for our simply awesome Cheesy Stuffed Meatloaf. Our Test Kitchen really knocked themselves out to make this delicious novel meatloaf recipe look like you fussed; but only you'll know what a cinch it is.
Notes
- It's always a good idea to let your meatloaf sit for at least 10 minutes before slicing it up for eatin'! It's the easiest way to get the most perfect-looking meatloaf slices!
- You can't go wrong if you pair this with some roasted potatoes and a bowl of Country-Style Green Beans. Mmm! (Plus, don't forget about the Best Ambrosia Pie for dessert!)

Ingredients
- 2 pounds lean ground beef
- 3 slices white bread, torn into small pieces
- 2 eggs
- 1/4 cup prepared yellow mustard
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 2 cups (8 ounces) shredded sharp Cheddar cheese
- 2 scallions, sliced
- 1 cup barbecue sauce, divided

I made the Cheesy Stuffed Meatloaf and my son husband love it. My son was amazed by how the cheese looked so pretty in place when you slice it. The taste was delicious and flavorful. I loved how the barbecue sauce brought that meatloaf to a whole new level. I always make two meatloaf so I could freeze one but a-day-and-a-half later I had to thaw out the other meatloaf because the first one wasn't enough. It's that good. I would recommend everyone to try this recipe and see for yourself how good it is!

I was told this was the best meatloaf to date!! I followed the recipe exactly and it was delish.....I made it ahead so I could reheat the next day, doesn't work that well because of the cheese, but that day I did bake it...oooh it looked so good!...This is a keeper

I added a cup of shredded cheddar and a cup of sliced scallions to the meat mixture. I put the three slices of white bread in the blender to make fresh bread crumbs. When formed on the waxed paper, I first slathered barbeque sauce (I use Sweet Baby Ray's) over it, then sliced scallions, then shredded cheddar (about a cup, more if you like a lot of cheese), then rolled it up and sealed the edges. I used ground chuck, which has a lot of fat, so I used a turkey baster to suck the melted fat out of the pan after it was cooked. I've made it with both cheddar and mozzerella, but the cheddar was tastier. I have already made this meat loaf more than six times, it's that good!

When I make this, I add about one cup of shredded cheddar to the meat mixture, along with a cup of sliced scallions. Then roll it up and seal the ends. I usually use ground chuck, and I use a turkey baster to get the melted fat out of the pan after it's cooked. I have also used shredded mozzerella in place of the cheddar, but the cheddar has more taste. I make fresh bread crumbs with the three slices of white bread by using a blender rather than tearing the bread up, I think it mixes in better as crumbs than it does with torn up pieces.

tried this with coby-jack cheese (what was in fridge), and topped it with salsa. I served it with rice my husband son really enjoyed it. next time out, I will follow recipe closely.

This was delicious! My husband and son said it was the best meatloaf they had ever had. It was even easier to make than I thought it would be and the combination of the Cheddar cheese and BBQ sauce was so good! Definitely a keeper!

My son would never eat meatloaf but he tryed this and asks for it all the time. It is easy to make and everyone loves it!!! I have told my friends about it and they love it too!!!

This turned out to be a lot easier than I thought it was going to be. I used parchment paper ( as I had that) instead of wax paper. It was a real treat and I already am having requests to make it again =). I combined it with the suggested garlic/rosemary potatoes ... so so yummy!

i make 2 turkey meatloaves that go over well,to get a beefy taste i add 4 tblsp A1 sauce, nextone i use a cup of stop stuffing for 2lbs stuffing

OMG! This recipes is a Keeper as we call it in our house. In the recipes it calls for torn bread, I believe, I used bread crumbs instead. In the hamburger mix, I used all my spices that I like to use. Man moist and so yummy! Great Recipe Mr. Food

I used lean ground beef but because the cheese had melted the meat loaf was floating in oil and I had to drain it. It didn't look very appetizing because of the oil but it turned out to be delicious.

I have made this for years and my family loves it! The only change I have is I cook it on a broiler pan so the fat drains off and away from the meatloaf.

I make this same recipe, but instead of rolling it up, I cut the mixture in half, make bottom half shaped like a meatloaf, indent the middle, then I cut up a chunk of sharp cheddar cheese, lay it in the indented spot and put the other half of the mixture on top and pinch edges.....ooh its so good!!

I also have been making this for years. My son and husband call it " I love you " meatloaf. Sometimes I've added chopped dill pickle in with the cheese and scallions. Kind of like a cheeseburger without the bun.

I am very disappointed that you have changed your method of us sharing your recipes with others. I so enjoyed sharing some of your recipes with my daughters when I found some good ones that I knew they would really love. I have more time to search for them than they do, because of their work and young children. I sure hope you will change back to your old method of sharing recipes.
