Mama's Meat Loaf

Mama always knows how to make something look and taste extra-yummy, which is why we always think that "Mama cooks best!" Well, Mama's Meat Loaf is no exception; it's a dinner your whole gang will look forward to eating!
What You'll Need
- 1 1/2 pound ground chuck
- 1/3 cup finely chopped onion
- 1/2 cup Italian bread crumbs
- 1 egg
- 2/3 cup ketchup, divided
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
What to Do
- Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
- In a large bowl, combine all ingredients except 1/3 cup ketchup; mix well.
- Place mixture on prepared baking sheet and form into an oval (football) shape. Spread remaining 1/3 cup ketchup evenly over top.
- Bake 1 to 1-1/4 hours, or until juices run clear. Allow to sit 5 minutes then slice and serve.

Try using CHILI SAUCE instead of ketchup. Chili sauce "brightens" up much, much better than ketchup!! I use chili sauce in lots of things instead of ketchup.

I use home made chunky salsa instead of the ketchup then serve it with some melted pepper jack cheese on top, never anything left for meatloaf sandwiches!
