Spice up the weeknight rotation with our Meatloaf Mexicana! This traditional meatloaf is packed with Mexican flair, giving it that extra flavor that will wow the crowd.

What You'll Need

  • 1 1/2 pound ground chuck
  • 1/3 cup salsa
  • 1 egg
  • 2 tablespoons taco seasoning
  • 1/4 cup (1-ounce) shredded cheddar cheese

What to Do

  1. Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
  2. In a large bowl, combine all ingredients except the cheese; mix well. Place mixture on prepared baking sheet and form into an oval shape.
  3. Bake about 1 hour, or until juices run clear. Remove from oven, sprinkle with cheese, then bake 5 more minutes, or until cheese is melted. Allow to sit 5 minutes, then slice and serve.

I use Rotel tomatoes but think I will try the salsa. Meatloaf is my husband's favorite meal and spicy , too. I also throw in some salad green olives.
