Farmstyle Sweet Potato Biscuits

What You'll Need
- 2 1/2 cups pancake and baking mix
- 1/2 cup milk
- 1/4 cup (1/2 stick) butter, softened
- 2 tablespoons light brown sugar
- 1 (16-ounce) can yams/sweet potatoes, drained and mashed
- TOPPING
- 1/4 cup (1/2 stick) butter
- 2 tablespoons light brown sugar
What to Do
- Preheat oven to 450 degrees F.
- In a large bowl, combine pancake and baking mix, milk, 1/4 cup butter, 2 tablespoons light brown sugar, and yams. Stir until soft dough forms. Knead dough with hands until well mixed. Drop by heaping tablespoonfuls onto a baking sheet.
- In a small microwaveable bowl, combine TOPPING ingredients. Microwave 15 to 20 seconds, or until butter is melted. Brush mixture on top of each biscuit.
- Bake 10 to 12 minutes, or until golden. Serve warm.

I am waiting to make this bread but my can of sweet potatoes is 40oz. How many CUPS do you use for this recipe?

I would use about 1/2 of the potatoes less a potato or two after you have drained them. You can save the syrup for the remaining half if you have other plans for them.

1 cup equals 8 oz., so you would need two cups because the can in the recipe is 16 oz.

I'm sure this could be made gluten free with Pamela's pancake and baking mix. I intend to try!!

Do you mean 2 1/2 cups of bisquick AND 2 1/2 cups of pancake mix? or just bisquick. I'm confused. 5 total cups or just 2 1/2 cups of bisquick.

Whether BISQUICK or BAKER'S CORNER or any one of many other baking mixes, the box will say the mix is for Pancakes, Waffles, Buiscuits, Muffins, etc..., so just 2 1/2 cups of any one of those mixes will do.

It is 2-1/2 cups of pancake and baking mix, using a brand such as Bisquick. The total amount is 2-1/2 cups.
