New Garlic Bread

Yet another delicious treat from those clever California cooks!
What You'll Need
- 1 (1-pound) loaf French or Italian, bread
- 3 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 (9-ounce) package frozen chopped spinach, thawed and well drained
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon fennel seed, crushed
- 1 large tomato, seeded and chopped
- 6 ounces (1-1/2 cups) shredded mozzarella cheese
- 1 tablespoon dried basil
- Fresh chopped parsley for garnish (optional)
What to Do
- Preheat the oven to 400F. Cut the bread in half lengthwise and place, cut side up, on a foil lined-baking sheet.
- In a medium-sized skillet, heat the oil over medium-high heat until hot. Add the onion and garlic; cook and stir until tender, about 4 to 5 minutes. Add the spinach and heat until warm, about 1 minute.
- Remove from heat and stir in the Parmesan cheese, Italian seasoning and fennel seed; mix well.
- Spread the spinach mixture evenly over the bread halves. Sprinkle with the tomato, mozzarella cheese, and basil.
- Bake for 8 to 10 minutes, or until the cheese is melted and the edges of the bread are golden brown. Garnish with the parsley, if desired, then cut into slices and serve.
