Try Black Walnuts for a one of a kind taste, they are a little pricey but well worth the flavor. Also try roasting English Walnuts in an 350* oven just until they become fragrant, about 10-12 minutes. Pecans are also very good. this recipe is very close to one I got from my Grandmother 50 years ago.

I searched for years till I found a banana bread recipe that tasted like bananas and finely found one close enough then tweaked it to perfection. This recipe is very close to mine. I use 7 roasted bananas for two 9x5 pans. Roasted Bananas: Lay unpeeled bananas on foil covered baking sheet. Bake @ 350 degrees about 20 min.or more. The skins will turn black and the flesh part will be soft to touch. Cool then open peel and use bananas in recipe. When bananas are on sale I stock up then roast them and freeze flesh part in plastic containers labeled with the number of bananas inside. Thaw and use when needed.

add 1 teaspoon cinnamon, 1/2 cup raisins and 1/2 walnuts and yummy! I used virgin olive oil instead of veg. oil. or you could also use 1/2 c. apple sauce. Both are healthier substitutes. Less fats & calories.

How long would you bake this if you wanted to put them in cupcake papers.

Not really sure. I sort of imagine until they are golden on top, and when you insert a tooth pick in the center it comes out clean. Good idea making them into individual little cakes.
