A splash of soda pop in the batter, makes our Cherry Cola brownies a stand-out. Everyone will know for sure that yours are homemade, which means you get to serve these with extra pride!

What You'll Need

  • BROWNIES
  • 1 (19.9-ounce) package fudge brownie mix
  • 3 tablespoons vegetable oil
  • 2 eggs
  • 1/2 cup regular cola soda
  • 1/2 cup chopped maraschino cherries, plus 12 cherry halves for garnish
  • FROSTING
  • 3 2/3 cups confectioners's sugar
  • 1/2 cup (1 stick) butter
  • 6 tablespoons regular cola soda
  • 3 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking pan with cooking spray.
  2. In a large bowl, combine brownie mix, oil, eggs, and cola; mix well. Stir in chopped cherries, then spread into prepared pan.
  3. Bake 25 to 30 minutes, or until a toothpick inserted in center comes out clean. Let cool 1 hour.
  4. In a medium bowl, place confectioners' sugar; set aside.
  5. In a small saucepan over medium heat, combine butter, cola, and cocoa. Bring mixture to a boil, stirring constantly. Pour cocoa mixture into confectioners' sugar and beat until smooth. Stir in vanilla.
  6. Spread frosting over brownies and garnish with cherries. Cut and serve.

How could I make this brownie more Fudge like and less Cake like?

Hi there! The Test Kitchen has not made this recipe with one less egg, which is what we would normally suggest to create a more fudge-like brownie. In this case, we believe that baking the brownies for 5 less minutes than the suggested baking time, or after a toothpick inserted in the center comes out fudgy/wet. Enjoy!

Love cherry cola. This would be such a fun, unexpected brownie recipe!

I added 1/2 teaspoon almond extract to the icing. It is addicting!! Loved by all.

Would it be possible to use cherry flavored cola soda?

Try duncan hines. You can make the cake or brownie.

I will definitely make again, but I will use a different brownie mix next time. I used Betty' Crockers, Fudge Brownie mix and the texture came out more like a cake than brownie. All in all, it was very easy to prepare and the frosting is the best!

That should be because of the liquid called for. This recipe (which I just saved to my "recipe box) has too little oil and much too much liquid for a brownie texture.
