Holy cannoli! You're definitely going to include Nonna's Cannoli Poke Cake into your dessert line-up, 'cause it's got all the flavor of one of your favorite Italian pastries, but in a party-sized cake form!

What You'll Need

  • 1 (16.5-ounce) package white cake mix, batter prepared according to package directions
  • 1 (14-ounce) can sweetened condensed milk, divided
  • 1 (8-ounce) container mascarpone cheese
  • 1 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 1/2 cup confectioners' sugar
  • 1/4 cup mini chocolate chips

What to Do

  1. Coat a 9- x 13-inch baking dish with cooking spray. Add batter and bake according to package directions; let cool.
  2. Using the end of a wooden spoon, poke holes about 1 inch apart all over top of cake. Reserve 2 tablespoons condensed milk in a small bowl; pour remainder over top of cake and into holes.
  3. In a large bowl, beat mascarpone, ricotta cheese, and vanilla until creamy. Beat in confectioners' sugar and reserved condensed milk until smooth. Spread frosting evenly over top of cake. Sprinkle with chocolate chips.
  4. Refrigerate cake 2 hours, or until ready to serve.

My family LOVED this! I'm making it again this weekend for Easter

We made this for a "Birthday Party" last night... I had to print out 18 copies of them (we made Two)

We made two cakes

WAY too sweet, cloyingly so. Drizzle a small amount of melted semi-sweet or dark chocolate over top rather than the chips cut back on the sugar by 1/3.

I plan to make this and use whipped cream w/ the cheeses so that it is not so sickening sweet as I rarely make confectionery sugar frostings.

I plan on Making this cake today. What will happen if I put in the whole eggs instead of just egg whiles?...

Hi there! While using a whole egg rather than just the white will not alter the outcome of this recipe, it will change the color of this cake from white to an ivory. Enjoy!

This certainly is different! Maybe if you come from an Italian family, it's not so different, but I've never had anything like it and I'm anxious to try it! Mascarpone is readily available where I live, but a little pricey-about like fresh, whole milk mozzo. I'm thinking I might like something better than mini chocolate chips on top, like using my grater to make peels or shreds of milk chocolate from a Symphony candy bar.

Hi there! While the Test Kitchen has not made this recipe without mascarpone cheese, we believe that regular cream cheese would be an equal substitution for Nonna's Cannoli Poke Cake. Enjoy!
