Pineapple Cream Cake

What You'll Need
- 1 (15-ounce) can crushed pineapple, undrained
- 1 (18.25-ounce) package yellow cake mix
- 2 large eggs
- 1 (11-ounce) can mandarin oranges, drained
- 1/2 cup mayonnaise
- 1 (12-ounce) container frozen whipped topping, thawed
- 1 (5.1-ounce) package vanilla instant pudding mix
What to Do
- Preheat oven to 350 degrees F. Drain pineapple, reserving juice; set pineapple aside.
- Combine pineapple juice, cake mix, eggs, mandarin oranges, and mayonnaise in a large mixing bowl. Beat at medium speed with an electric beater until blended. Pour batter into a greased 9- x 13-inch baking dish. Bake 30 minutes or until a wooden toothpick inserted in center comes out clean. Cool in dish on a wire rack.
- Combine drained pineapple, whipped topping, and pudding mix in a mixing bowl; beat at low speed until blended. Spread mixture evenly over cake. Cover and chill at least 1 hour before serving. Store in refrigerator.

I love a citrus dessert in the summer! Even though summer isn't quite here yet, I'm stocking my pantry with these ingredients, because it's going to be the first summer dessert I make! I'm going to swap some of the mandarin oranges for apricots and add a few dried cranberries for color where some recipes call for maraschino cherries. I don't care for those.

very easy, delisious! as a rule, I always add a little almond extract to any cherry dessert I make, just a capful or so, which really enhances the cherry flavor. left out cinnamon to please certain family members..... we all have em!

I've seen recipes that you can put holes in cake be adding topping, would you agree with doing that with this recipe? It sounds so delicious, but hubby don't care for cool whip, so maybe putting holes it wouldn't be quite as sweet new noticeable. I hope you answer quickly, I plan on making tomorrow. Lol

Hello - You can certainly try turning this cake into a "poke cake." You would need to make the pudding thinner, so that it can be easily poured into the holes. We recommend making the pudding without the whipped topping, and then just adding some milk to thin it out. Let us know how it turns out!

Im confused due to two different things bein said..The recipe says set pineapple aside and use it for the topping and use juice for cake, but the opposite of that is bein said in a reply to another commentor. I would really like to make this for my family so which is the correct way :)

ABSOLUTELY DELICIOUS Made some changes though one quite by accident The Duncan Hines box mix was oz so I decreased the pineapple juice in the batter by same with the mayo subbed Tbs low-fat mayo plus Tbs and tsp of cannola oil for the full-fat mayo Quite by accident I bought an oz container of Lite Cool Whip--the frosting was VERY thick but still good Next time I think I will try a lemon cake mix and I think I would still make a lesser dose of frosting since the Cool Whip is a chemical cocktail An oz container has a total of calories and gms of fat all gms are SATURATED FAT and contains about cups of mixture Since heavy cream whips up to about twice its original volume you would need - cups of unwhipped cream to make the same amount as is in the small Cool Whip container…Read More So the heavy cream comes in at a whopping calories and gms of fat gms of which are SATURATED So which is worse A chemical cocktail or artery-clogging fat Anyway it's DELICIOUS AND VERY EASY ENJOY

I do not find, as did another person who commented, that Mr. Food recipes are disappointing or unappetizing. On the contrary, I am pleased that most of the recipes use ingredients that I usually have on hand. And one can often substitute ingredients or make adjustments to their liking. Keep those recipes coming!

Have had this recipe for years and it is really delicious. But mine is called a mandarin orange cake. A lot of desserts on this website have a different name but the same ingredients.

Im new to this site but I have to say I find most of these recipes to be disappointing and unappetizing. So many call for heavily processed foods like Cool Whip, instant puddings, canned fruit, packaged rolls or packaged dough, etc. Where are the real baking tips here? I would feel embarrassed serving some of these Home made desserts to guests.

Many of the recipes on "Mr. Food" websites or affiliated websites, never claim to be "SCRATCH" recipes. They are recipes for the busy cook who want great dishes to serve to family and friends. Many of the folks who make the recipes ARE NOT "advanced cooks" or chefs. If you find the recipes disappointing and unappetizing, I recommend you find and choose recipes from websites like Food Network, Cooking Channel or go to your nearest public library and borrow cookbooks with "Scratch" tried and true recipes like Good House Keeping, Better Homes and Gardens, or The Joy of Cooking.

You probably could, but I would not recommend it. If you read the ingredients on Miracle Whip and Mayonnaise, they are not both created equal. Using Miracle Whip may change the consistency or taste of your cake. I would recommend buying a "pint" of mayonnaise (my preference is Hellmans). Then use the remaining 3 cups of mayonnaise (with Miracle Whip) in 1 part mayonnaise to 2 parts Miracle Whip for tuna, chicken or egg salads

If you add the oranges at the same time you add the ingredients and beat the batter, they become almost invisible. You only see specks of oranges. It adds to the flavor and the moisture of the cake. I am careful to not beat them too hard, I like pieces of oange in the cake.

I ate this cake at a Club meeting but it did not have any mandarian oranges in it. Perhaps they just left them out , which is fine with me as I do not care for them. I want to make it and bought the pineapple, vanilla pudding( instant) and cake mix but did not know how to put it togather. Guess I will try this way. Thanks.

I can't find a boxed cake mix of 18.25oz - usually they're 16.25 or even 15.25. Would there be any change to the recipe?

Great question! Use whatever you can find that is closest to the recipe. You will not need to adjust the recipe for the difference in the size of the cake mix. Enjoy!

The Cake Doctor suggests the following as a smaller cake mix fix Many cooks have been frustrated to watch cake mix package sizes shrink lately. But do not despair! If you are accustomed to baking my recipes with 18.25-ounce mixes, there is a simple way that you can add flour to the smaller mixes and still bake Cake Mix Doctor recipes. Pour the cake mix into a large bowl and whisk in 6 tablespoons all-purpose flour. Now proceed as the recipe instructs. Not only will the cake achieve good volume, but it will have a nice structure and slice evenly. I learned this trick years ago before the mixes were downsized. If I added a little flour to the cake mix, then the cake seemed to have more body, and it did not sink or shrink when cooling. I hope you enjoy this simple solution!"

Good question! If you take a look at Step 1, the instructions are to drain the pineapple, reserving the juice. You then use the reserved juice in Step 2 and the drained pineapple in Step 3. Thank you!

the term is correct -drained pineapple means (UN) drained in other words you have "drained" the juice from the pineapple -now it is drained

This is a very delicious cake!!! Recipe I have is called; "Mandarin Orange Cake," and I make a double layer round cake with the creamy topping between the layers. Then I use another can of 'mandarin oranges,' drain it, and decorate around the whole bottom of the cake. Makes for a nice presentation. What if we left the MAYO out?????? Trying to eat a little healthier, could yogurt be substituted. I am a retired male who never made cakes until I reached 65.

They're using mayo instead of veg. oil. I wouldn't use yougurt. Try one of the mayos made with olive oil. Mayo will make the cake super moist and you won't be able to taste it. It might be healthier to use real whipped cream instead of that fake stuff (Cool Whip).

I forgot that you can sub unsweetened applesauce for oil, so you should be able to use that instead of mayo.

Comment to 'kittenzkatz'......... normally cakes call for eggs; egg is in 'Hellmann's mayo.' Not sure how your cake will come out with (sour cream). You can not taste the 'Hellmanns Mayonnaise' brand in cake recipes. Hope it works out good for you. Sherry

My boyfriend hates mandarin oranges so I used a 20 ounce can of pineapple and used the overage of pineapple in the cake. The whipped topping/pudding frosting is amazing. Mr. Food, you never let me down!

You should be able to find instant pudding anywhere. Try drug stores like Walgreens, Rite Aid, or Walmart. Dollars stores will have it too.

You can actually taste a half cup of mayo with all those other ingredients??? Hmmmmmm. Well, it looks like the may takes the place of a fat so I'd try maybe a half stick of butter softened. Good luck!

My grandmother used to make a similar version also. It didn't have mayo in it and I love her name of the cake much better. She called it "Sunshine Cake".
