Wow them all with this pumpkin cake that's all rolled up, jelly roll style! The swirls of creamy filling contrasted with the pumpkin-colored cake makes this Pumpkin Spice Roll an eye-catching autumn dessert.
What You'll Need
- 3/4 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- 1 cup pumpkin puree
- 3 eggs
- 1 cup plus 2 tablespoons confectioners' sugar, divided
- 1 (8-ounce) package cream cheese, softened
- 1/2 stick butter
- 1 teaspoon vanilla extract
What to Do
- Preheat oven to 375 degrees F. Coat a rimmed 10- x 15-inch baking sheet with cooking spray.
- In a large bowl, combine flour, granulated sugar, baking soda, and pumpkin pie spice. Stir in pumpkin and eggs. Pour mixture onto prepared baking sheet, spreading evenly.
- Bake 12 to 15 minutes, or until a wooden toothpick inserted in center comes out clean. Remove from oven and invert onto a clean kitchen towel that has been sprinkled with 2 tablespoons confectioners' sugar. While cake is still hot, roll it up in the towel jelly roll-style from the narrow end; cool on a wire rack. When cool, unroll cake and remove towel.
- In a small bowl with an electric mixer on medium speed, beat cream cheese, butter, vanilla, and remaining confectioners' sugar. Spread onto cooled cake and immediately re-roll (without towel). Place on serving platter and refrigerate until ready to serve. Cut into slices just before serving.

When I took it out of the 'fridge the roll was moist and sticky. After eating I thought the taste was OK but the feel was chewy.

I just love the flavors of Fall and the holiday seasons that follow...it seems that's when the most amazing aromas linger in your home from endless baking. I really want to make this recipe but for some odd reason every time I think of making a cake roll I'm instantly mortified at the thought of my cake falling apart or worse...being stuck onto the towel. Because I'm such a fan of cinnamon, I think adding some to the cream cheese would really enhance this cake roll. Do you think I should use cinnamon extract or is ground ok?

This is a family favorite and I am expected to bring it to church gatherings not too. I am making 5 them this weekend for a church event. I don't use the towel. I use wax paper. Lightly spray cooking spray on a 1/2 inch shallow cookie sheet. Then lay down the wax paper to cover, then lightly spray the wax paper with cooking spray. Follow recipe otherwise. You will find it will smoke a little when baking but that's just the wax paper and it doesn't effect anything. Makes it cheap and super easy and clean up to be easy as well.

Loved it. Very easy, although mine stuck a little to the pan, I managed to patch it up. Made it yesterday only have 3 people in the house and its already almost gone.

Use a disposable towel sprinkled with the powdered sugar. Also try pieces of pecans in the cake or the cream cheese frosting.

Big hit at a family gathering. Made with my own pumpkin pie spice mix (all things I have in the spice cabinet). Question: has anybody tried baking it on a cookie sheet lined with parchment (sprayed) and using that to roll it? Just a thought.

Good idea..much easier but maybe the towel keeps it from getting soggy?? I don't know. Sounds like a good idea. Maybe the towel is to keep the cake from getting soggy but parchment is certainly worth a try. The wax paper idea mentioned above may be good too. I use wax paper to line the bottom of my tube pan when making a cake

When reading recipes, and it calls for butter, does it mean real butter or margine? I call everything butter. I never buy real butter, it is so expensive. Can you use margine?

Yes, you have to roll the cake in the towel, so the cake will not stick to itself when rolled, since you have to unroll it to put the filling in.

jeannap1 I put the wrong comment in the wrong box. If a recipe calls for butter, you should use butter, if it calls for margarine, then use margarine. Sometimes margarine that is substituted for butter will not come out correctly. Hope that helps.

Ladies, ladies, ladies. Stop buying canned pumpkin and make your own! It's so easy. Remove seeds and innards of the pumpkin, cut into small chunks and cook in a huge pot with just enough water to keep from sticking. Cook until tender like potatoes or turnip. Drain well and put into a blender and puree until smooth. Do NOT peel pumpkins. The skin gives you that lovely color and taste. I place cooled puree in margarine containers and freeze until ready to use. No added stuff that comes in the cans. One margarine container makes 1 pie. Would work in recipes like these just fine.

What size margarine container (that makes one pie)? Also, I know you said 'do not peel", however I would like to know does this get soft enough that you wouldn't notice it in whatever it is you make with pumpkin? (I always peeled mine)

What is the difference between pumkin puree and canned pumpkin? Can I use canned pumpkin?

That is a great question and it seems to come up a lot this time of year. Canned pumpkin and pumpkin puree are one in the same and it is just pumpkin. The item that is different is pumpkin pie mix. This contains spices that typically are added to flavor a pumpkin pie. So when making all of these delicious pumpkin recipes for fall, be aware of recipes calling for canned pumpkin or pumpkin pie mix.

most real butter is already divided into 4 "1/4 lb sticks " same with stick margarine, hope this helps.

The recipe call or 1 cup of PUMPKIN PUREE. It will be a small can. Be sure to use the puree and not just canned pumpkin.

Canned pumpkin and pumpkin puree are one and the same. Pumpkin pie mix is different with added spices.

I just made this cake for Thanksgiving and it was delicious. Everyone loved it and it was even better the next morning with coffee! I followed the recipe exactly and my husband assisted me with the rolling up of the cake. (He's more of a perfectionist than I am, and he did a beautiful job!)

I made this the other night. IT was quick and tasty...Make sure you put confectioner's sugar on the towel and make sure the pumpkin roll is cooled comletely. It was easy to roll and taste so good!!! WILL make again

I made this for a department pot luck at work and EVERYONE asked for the recipe. It was absolutely delicious. I lined my cookie sheet with tin foil and the cake came out nicely and rolled beautifully. Thanks!!

I made this tonight and it tastes great and was pretty simple, but-it did crack when I unrolled it some. I think when it is chilled I will be able to hind it, but I must have done something wrong. Any ideas?

I made this tonight but when I unrolled the towel it broke apart where it was rolled...what can I do to keep this from happening..I took a sifter and put the confectioners' sugar on it...They taste great but look horrible !!

I didn't have problems with either of mine, but one thing that I kept in mind is that the longer it cools, the less plyable it will be. So I let it cool just enough so that it wouldn't melt the cream cheese frosting and then rolled it up immediately again. Do you think you may have let it cool too long?

What is Pumpkin puree? I have solid pumpkin in a can, but is puree the same as the ready made pumpkin pie mix in a can? Thanks

Pumpkin puree is NOT the pie mix. It is solid pack pumpkin. There is a difference. Pie mix is ready to go....Pumkin puree is the pure pumpkin with nothing added and is known usually as "solid pack" or something similar. Check the ingredient list...if it lists spices that is not what you want.

The cream cheese might not freeze well, but you could me it next Tuesday and just keep it in the fridge and it would keep.

Yes, they will be fine. I freeze them all the time and they come out wonderful. You will want to thaw this in the refrigerator and store it in the refrigerator after it has been frozen. I make several of these at one time and freeze them.

I have made this recipe for many years and everyone loves it. I add chopped walnuts at the end of Step 2 before baking. Once you make it, you will realize how easy it is and it comes out perfect every time.

make sure you use plenty of powdered sugar and use the towel. The towel wraps so it looks like it is the filling of the roll. A lot of people try to not wrap the towel inside. the towel needs to be inside and you need to use a linen towel so you don't have any lint going on the pumpkin roll. the tip to it working is using the towel and powered surgar correctly. If you need more than 2 tablespoons of sugar don't be afraid to use it.

I am going to make this today. My husband loves pumpkin roll, I'll try it out before Thanksgiving. The video was very helpful as I too was confused about the towel, I thought the cake would break. Thank you happy Holidays
