S'mores Icebox Cake

Our no-bake S'mores Icebox Cake will take your tastebuds 'round the campfire. Enjoy this easy chilled dessert anytime you want to bring childhood memories to life!
What You'll Need
- 1 (14.4-ounce) box honey graham crackers
- 2 (4-serving) packages chocolate instant pudding mix
- 3 cups milk
- 2 1/4 cups mini-marshmallows, divided
- 1 (8-ounce) container frozen whipped topping, thawed
- chocolate shavings for garnish
What to Do
- Line bottom of an ungreased 9- x 13-inch baking dish with one-third of the graham crackers.
- In a large bowl, whisk together pudding mix and milk, stirring until mixture thickens. Stir in 2 cups marshmallows.
- Spread half of pudding mixture over graham crackers in baking dish. Repeat layers with one-third of graham crackers and remaining pudding mixture. Top with remaining graham crackers.
- Spread with whipped topping. Sprinkle with chocolate shavings and remaining marshmallows. Cover and chill for 4 to 6 hours.

YUMMY! Everyone loved it, but hey you can't go wrong with graham crackers, pudding mellows, and cool whip. I even used sugar free pudding and lite cool whip.

The photo shows that the marsh mellows on top are toasted but it doesn't say how it was done.

Hello! - For photo purposes, we used a blowtorch to toast the tops of the marshmallows, so it'd be easier to see the marshmallows on the whipped topping. We don't recommend trying this at home, unless you have experience working with a blowtorch in the kitchen.

I just made this for my friends yesterday afternoon and everyone raved about it. The one thing I forgot was to save some marshmallows for the top and I put them all in the chocolate pudding! Oh well, it was still delicious and the pieces were easy to get out of the pan with my spatula (sometimes my servings don't look as nice as the picture but these did!)

Its sounds delicious, but I make an Ice Box cake that is similar to this, but without marshmellows, I used sliced bananas in between layers, but you should be more specific about the whipped cream that is added, I use Dream whip whicj I find is the best whipped cream topping for these types of cakes that are put in refigerator for a period od time. sooooo sooooo good ;)

To make it "healthy" use sugar free pudding mix, skim or 2% milk, and Lite Cool Whip. You won't even notice the changes.

love the simplicity of this...sliced bananas or raspberries would make it seem healthier!
