What You'll Need

  • 1 (19.6-ounce) box frozen coconut layer cake
  • 1 (16-ounce) container frozen whipped topping, thawed, divided
  • 1 (12-ounce) package frozen raspberries
  • 1 (19.6-ounce) box frozen lemon layer cake

Spring Fling Layered Cake Instructions

  1. Cut coconut cake into 7 slices. Place in a single layer in a 9- x 13-inch baking dish, covering the bottom of the dish.
  2. In a medium bowl, combine half the whipped topping and the raspberries; gently stir until well combined. Spread mixture evenly over coconut cake.
  3. Cut lemon cake into 7 slices. Place slices in a single layer over raspberry mixture. Evenly spread remaining whipped topping over lemon cake layer. Freeze until ready to serve. Let sit 10 minutes, then cut into squares.

Notes

  • Garnish with fresh raspberries and mint leaves.

Did not come out well. Frozen, you can't cut it. If you let it thaw a bit, it becomes messy. Do not recommend.

You can't possibly cut the cakes while frozen. I just opened one of the boxes and it's hard like a piece of wood... Need some help here, please!

I would call this recipe a "just in case" recipe. Just in case unexpected company drops in this spring fling cake recipe is simple enough to whip up and your guests would not be the wiser about how easy it is to prepare. Great recipe trick.

This Spring Fling Cake is a great semi-homemade recipe. All of the ingredients are prepared and you only have to assemble. Puppylove346 0356378, I would think the addition of sugar is a personal preference.

What an easy way to make a fabulous dessert! I've tried frozen coconut cakes, though, and they were awful. I would go one step further and make my own coconut and lemon cakes or buy them from the bakery department at my grocery store. Then just freeze the whole thing after assembling.
