What You'll Need

  • STREUSEL
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 stick butter, cut into pieces
  • COFFEE CAKE
  • 3 cups pancake and biscuit mix
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cup milk
  • 2 eggs
  • 1/2 stick butter, melted
  • 2 teaspoons vanilla extract

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a medium bowl, combine Streusel ingredients; mix with a fork until crumbly, and set aside.
  3. In a large bowl, whisk pancake mix, granulated sugar, baking powder, cinnamon, and salt. In a medium bowl, whisk milk, eggs, butter, and vanilla. Add egg mixture to pancake mix mixture and stir until combined. Pour batter into baking dish and sprinkle evenly with streusel.
  4. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean.

I haven't made this yet, but I know I can rely on Bisquick recipes to turn out well. I think streusel coffee cakes make great breakfast cakes and dessert cakes. My family enjoys coffee cakes as an alternative to frosted cakes. These are so yummy with coffee or milk!

I made this wonderful coffee cake again yesterday I defrosted a half bag of frozen blueberries sprinkled them over batter then sprinkled topping over baked DELICIOUS!

homemade Bisquik recipe 3 c flour 11/2 Tbl baking powder 1 t salt 1/2 cup plus 2 Tbl oil then proceed with recipe did not add any butter did no it need it

used 1/2 cup brown sugar 1/2 cup Splenda for topping also added 1/2 cup Splenda to main recipe ..did not have Bisquik so made my own

My husband really likes those Hostess coffee cakes, but really they are quite expensive for the amount you get. I am glad that there is a recipe for these. I can make them myself anytime I want.
