Chicken Reuben Casserole

This easy-to-make Chicken Reuben Casserole has the same tasty ingredients as the classic sandwich but presents them in a fresh, new way. See for yourself why it's one of our favorites.
What You'll Need
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14-1/2-ounce) can sauerkraut, drained
- 4 deli corned beef slices
- 8 (1-ounce) slices Swiss cheese
- 1 1/2 cup Thousand Island dressing
- 1 cup soft rye bread crumbs
- 2 tablespoons butter, melted
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. Sprinkle chicken with salt and pepper; place in baking dish.
- Layer chicken evenly with sauerkraut, corned beef, and Swiss cheese. Pour dressing over top.
- In a small bowl, combine bread crumbs and butter; sprinkle over casserole.
- Bake uncovered 30 minutes, or until chicken is no longer pink in center.

I had some left over deli corned beef to use up and I found this recipe. We like all things sauerkraut, so I thought I'd try it. I was skeptical that the chicken would be totally cooked in only 30 minutes, so I cut the breasts into smaller pieces. Not only was the chicken done in the stated time, but the casserole was absolutely delish! My husband had seconds and wanted the rest the next day. I will definitely make this again. Dutchcook1949

Just an fyi...I've made this plenty of times. Because these are boneless chicken breasts they WILL be cooked in the 30 minutes. Mr Foods directions are simple and easy. They have ALWAYS made it that way so that those who don't cook often will understand it. They are not like America's Test Kitchen that belittles every single recipe that they try to make....including one or more of the late Julia Child.

Thanks for yet another recipe that can be easily adapted for a family that is 1/2 medically-mandated ULTRA-low-carb and 1/2 that NEEDS those carbs for highly physical work and play! I'll be making this soon, minus the breadcrumbs. I'll serve local artisinal rye "on the side." And EVERYBODY's happy :)

I like the idea of cooking & prep all ingredients then layering according to recipe prior to the final baking .Ooh Ooh it sounds so good!

In response to "angelpatch" I think I would boil chicken & this way you can be assured it will be thoroughly cooked. The other ingredients would add the flavor.

I'm wondering about the bread crumbs. Can you buy rye bread crumbs or do you buy rye bread and tear it into small pieces?

You can buy rye bread and put in food processer and they will be soft and fresh,just like the person bad reply. Some people are still trying to learn. There are no bad questions, just people trying to learn. You should try to learn better manners, using that bad choice, No need to hurt sombodys feelings!!

Mr. Food has a bad habit of keeping the instructions to a minimum. It is also why they are not my first choice when looking for a recipe. Hey, Mr Food! Most of us failed "Mind Reading 101" in school! Wake Up and smell the Roses! LOL

In the casserole it calls for boned and skinned chicken breast but it does not say if they are raw or cooked. If cooked how are they cooked, baked boiled or fried. I know this is a silly question for you but most recipies say one way or the other. Thank in advance.
