Creamy Chicken Casserole

We've added some flair to this Creamy Chicken Casserole recipe by adding in some crunchy chow mein noodles and colorful veggies. This is a great chicken casserole to make on a busy weeknight or whenever you're craving something familiar, but with a tasty twist.
What You'll Need
- 2 cups cooked chicken chunks
- 1 (10-3/4-ounce) can condensed chicken and rice soup
- 1 (10-3/4-ounce) can condensed cream of mushroom soup
- 3/4 cup milk
- 1 cup chow mein noodles
- 1 cup fresh snow peas
- 1 tablespoon diced pimiento
What to Do
- Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
- In a large bowl, combine all ingredients; mix well, then spoon into baking dish.
- Bake 35 to 40 minutes, or until heated through.
Notes
- You can also add some drained, sliced water chestnuts to add even more cross-cultural flavor to this casserole.

This is a really good recipe and so very easy, however this is the last place I look for a recipe because many who comment seem so rude. I use capitals to type because I am older than most of you and I have a hard time with arthritis Why does it matter? Anyway, who says capitals are rude? Is that something else the younger people thought up?

I cook for one, and there is no reason why this dish can't be divided up into smaller portions and frozen until another day after you have eaten.

I also cook for one. I reduce recipes so I have 2-3 servings & freeze leftovers to take to work for lunch.

Good recipes for chick. casseroles. Oh, hv'g lived & wk'd for yrs - learned early those making unnecessary cruel & cutting remarks often are lonely and sad people. It proves nothing but their personalities. OH and thanks for this great sitel It's rare I don't pick up a new family and/or potluck recipe. Keep up the good work - ..will always miss Mr Food though!

I agree with you- those that have to criticize have nothing better to do...This is a WONDERFUL recipe- I too am a diabetic (5 shots of insulin per day). but I don't complain about nutritional info, because I am savvy enough to cater it to my own diet. However, Excellent recipe!

I haven't made this recipe yet, but plan on trying it with the help of my PCA (that is my Personal Care Attendant). I'd use all capitals to type this comment as it is easier for my arthritic hands to type without errors, but I fear rude, intolerant comments from "sryan5597 0307246" who was kind enough to point out that (s)he could hear "here" BSNYDER841 5935111.
