Who wouldn't enjoy a bubblin' cheesy seafood casserole at the end of a long day? This easy Shrimp 'n' Cheddar Bake recipe tastes restaurant fancy, but it's a cinch to do ourselves.

What You'll Need

  • 1 (10-3/4-ounce) can condensed cream of shrimp soup
  • 1 cup milk
  • 3 eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices hearty white bread
  • 4 slices sharp Cheddar cheese
  • 1 pound raw medium shrimp, peeled, deveined, and tails removed

What to Do

  1. Preheat oven to 375 degrees F. Coat a 2-quart casserole dish with cooking spray.
  2. In a large bowl, combine soup, milk, eggs, salt, and pepper; mix well.
  3. Place 2 slices of bread in prepared casserole dish. Lay a slice of cheese on each, then half the shrimp. Repeat layers. Pour soup mixture over bread.
  4. Bake 40 to 45 minutes, or until center is firm and puffy.

Notes

This makes for a perfect brunch or lunch along with a fresh-tasting crisp salad!

How about shrimp and grits? I could see the ingredients spooned over quick-cooked grits instead of the use of bread.

What ab skip the bread and serve it on popovers

I served this dish, substituting shredded cheddar for the slices, on two occasions and my guests raved about it each time.

I just made this for supper-well...the bread was not the best. This didn't really appeal to my family. Probably will never make again. But il keep trying other recipes ;)

I think it would be good with and brown rice or quinoa and add broccoli or another vegtable to make it a complete meal --it is very good!

try using Italian bread with crust removed. so much better.

Yes, Italian bread would hold up better. Or, what about toasting the bread first? Maybe it would prevent it from getting pasty.

Or, what about skipping the bread entirely and putting a layer of sliced potatoes down as if you were making scalloped potatoes?

make a cream sauce using fish stock, you could buy fish stock or make your own.

Wal-Mart used to carry the cream of shrimp soup - don't know if they still do....?
