No-Bake Cheesecake

You don't have to turn your oven on to enjoy a slice of one of your favorite desserts! Our No-Bake Cheesecake is an easy cheesecake recipe that'll leave them (and you!) cheering.
What You'll Need
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup sugar
- 1 cup (1/2 pint) sour cream
- 2 teaspoons vanilla extract
- 1 (8-ounce) container frozen whipped topping, thawed
- 1 prepared 9-inch graham cracker pie crust
What to Do
- In a large bowl, beat cream cheese until smooth. Gradually beat in sugar, then blend in sour cream and vanilla. Fold in whipped topping until well mixed.
- Spoon mixture into pie crust.
- Chill 4 to 5 hours, or until set. Keep refrigerated.

This is nice garnished with your favorite fresh fruit or pie filling, or sprinkled with crumbled chocolate cookies.

Perhaps the ingredients let you know that this is not such a "light" dessert, but the slice sure looks heavenly to me. Mix it up a little by adding just a little food coloring. Perhaps a contrasting color to the fruit you are planning to use to top the cheesecake.

I know this will be one of those recipes I make the day before or at least after the family is out of the kitchen for the night. They would never allow the four hours for this to set properly.

I have been making this for years, but use 1 cup of confectioners sugar, soft cream cheese,1 tsp vanilla and fold in 1 cup cool whip. it's great !!!!

I made this, and it seemed bland to me. Tasted like just cool whip, and just a hint of cream cheese. I won't be making this again.

Hello Shavon - The whipped topping in this recipe is a must, since it helps firm up the pie, but you can substitute the sour cream for any other kind of creamy cheese you like until the pie shell is filled. Enjoy!

I want to make 200 mini cheesecakes in small cupcake liners with this recipe. How much should I increase the recipe and can I use a small shortbread cookie for the crust or do you recommend a graham cracker bottom.

You can definitely use a shortbread cookie for the bottom. We aren't sure how much to increase the recipe by to get 200 minis. You can make 1 batch of cheesecake filling and see how many minis you can make with it then go from there.

You won't get the same flavor and texture using whipped cream. Whipped topping is sweetened and different consistency.

sweetfuzz 7594776, real whipped cream should work fine and taste better too. You may have to put in more sugar since topping has sugar in it.

I've never made it with the sour cream. Just whipped cream(not topping) and cream cheese.

This cheesecake is so easy to prepare. It takes about 5 minutes to prepare and it is soooo good. I garnished it with strawberries and another time with chocolate and peanut butter cookies.,
