Chicken Stroganoff

Chicken Stroganoff is a take-off on traditional stroganoff, which is typically made with beef. Our version is sure to be a welcome addition to your mealtime routine. Besides being quick and easy, the comfort factor is over the top.
What You'll Need
- 2 tablespoons (1/4 stick) butter
- 1 (4-ounce) can sliced mushrooms, drained
- 1/4 cup cooking sherry or dry white wine
- 1/2 teaspoon dried thyme
- 1 teaspoon seasoned salt
- 2 cups cubed cooked chicken (about 1/2 pound)
- 1 cup sour cream
What to Do
- In a medium skillet, melt butter over medium heat; add mushrooms, sherry, thyme, and seasoned salt, and cook 2 to 3 minutes, until thoroughly warmed.
- Add chicken and bring mixture to a boil; reduce heat to low and simmer 10 minutes, stirring occasionally.
- Remove from heat and stir in sour cream.
Note
- Serve this over 1 pound of cooked egg noodles.

Fantastic recipe! I did add dried dill as I love that in stroganoff. Longest part in the prep time was cooking the noodles! Great use for chicken left over from a weekend dinner. Used fat free sour cream for a low cal dinner. Definite keeper.

Just made this tonight, and it's delicious. It makes a lot of food, though. Prepare for leftovers.

just made this the other day...did not have sour cream but did have french onion dip...added leftover peas and carrots also very very good and will definately make again... my husband is a picky eater and really liked the taste...he even said that it would be good without the chicken and just have the noodles as a sidedish...

I use chicken broth for most of the recipes that calls for wine or sherry. Also for the sauce for the chicken stroganoff I make is 1/2 cup of light sour cream and 1 tablespoon of dijon mustard. the mustard gives it a little kick.

What can be used in stead of Sherry/wine that does not add any sodium to the dish. How/Where do you buy sherry/wine to cook with? I have no liquid in my house.

Use a wine you drink instead of cooking wine, cooking wine is usually has a lot of sodium and other things in it.

Most larger grocers have cooking wine available. It contains salt so is not drinkable. You will get the yummy wine-ey taste using it.

Hmm I've been making a version of chicken stroganoff for over 35 years and Its probably a lot better than this version.. but this sounds good.. I'd mix the noodles and chicken together though and I'd use red wine instead of sherry..
