Chicken with Peanuts

Drive through the Southern tier and you'll see field after field of peanut farms. That easily explains why they're featured in Southern cooking.
What You'll Need
- 2 pounds boneless, skinless chicken thighs
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup (½ stick) butter
- 2 onions, chopped
- 1 (14 ½-ounce) can diced tomatoes, drained with juice reserved
- 1/2 cup chunky peanut butter (see Note)
- 1/2 cup chicken broth
- 1 teaspoon sugar
What to Do
- Season chicken with salt and pepper. In a large skillet, melt butter over medium heat. Add chicken and brown 8 to 10 minutes, turning to brown on all sides. Add onions and tomatoes and continue cooking.
- Meanwhile, in a medium-sized bowl, combine reserved tomato juice, peanut butter, chicken broth, and sugar; mix well. Pour into skillet and bring to a boil.
- Reduce heat to low, cover, and simmer 10 to 15 more minutes, or until no pink remains in the chicken.
Notes
Don't have chunky peanut butter? Just use creamy instead and add 1/4 cup chopped peanuts, or just leave the peanuts out completely.

Interesting flavor combo. Used boneless breasts since that is what we had on hand. Only had creamy peanut butter so added some chopped peanuts. Glad I did because the texture is important to the experience. Served wit egg noodles.
