Hot 'n' Spicy Chicken Dinner

What You'll Need
- 2 cups uncooked instant rice
- 2 (10-ounce) cans diced tomatoes and green chilies, undrained
- 1 (10-3/4-ounce) can Cheddar cheese soup, undiluted
- 1 small onion, chopped
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 pounds chicken legs and thighs, skinned
- Chopped fresh cilantro, for garnish
What to Do
- Combine all ingredients except chicken; pour mixture into a greased microwave-safe 9- x 13-inch baking dish. Arrange chicken over rice mixture, and cover loosely with wax paper.
- Microwave, covered, at HIGH 15 minutes. Turn chicken pieces over. Microwave, uncovered, at HIGH 14 minutes or until chicken is done.
Notes
This recipe was tested in an 1100-watt microwave oven. If time is not an issue, this casserole can easily be baked in a conventional oven, uncovered, at 350 degrees F for 45 minutes. Either way you cook it up, it's mighty tasty.

I would do it in the oven also but use regular rice and cover the dish with aluminum foil. That's how I make my chicken and yellow rice. But I do brown the chicken first. The chicken goes on top of the rice mixture. Forty five mins. to an hour is good baking time.

We couldn't even taste the cheddar cheese soup in this, and the tomato taste wasn't pronounced, it was just hot. Also, I used all chicken legs, and I baked this dish instead of microwaving it.. The idea of just plain unseasoned chicken baking on the rice wasn't appealing, so I skinned the legs and cooked them in some hot oil, trying to brown them, for probably fifteen minutes. Even then, the chicken wasn't done quite enough after 45 minutes, so I put the dish back for another 10 minutes - still could have been more thoroughly cooked. This dish wasn't very good at all - won't make again.

I don't understand that all your recipes at least most of them all are always canned goods and microwaved which kills all the vitamins in the ingredients, and microwable foods are very unhealthy!! check it out!! It would be better if you had recipes that are healthy!! Seriously it would make your website much more appreciated!! For we are aware of healthy lifestyle! Just to let you know!!

How would you do this with non-instant rice or brown non-instant rice?

You would definitely have to add a little more liquid. Like chicken stock, broth or water. I would use the broth. Water will take away a lot of the flavor of the recipe.
